How to store radishes for winter. Local winter radishes are harvested in the late fall & store well into late winter—thus they are a great local choice for winter salads! Trim the tops off the unwashed radishes, removing roots and leaves. Winter varieties include miyashige, misato rose, china rose and black spanish round.

If you leave these on, the radishes shrivel and go soft. Toss gently, then drizzle with the oil and toss again. Instead, wrap the white root in a damp towel and store it in the refrigerator, particularly in the crisper drawer.

When placed in the fridge, the radishes should last for several weeks. Season with salt to taste. This technique works best for fall and winter radishes, as well as daikon radishes, which have thicker skin and are less likely to desiccate.

Slice the watermelon radish bulbs in half and soak them in ice water for 20 minutes.
